(Speculation)
When follow an user from a Peertube platform, only the videos of the account you follow display on your mastodon instance. Differently from mastodon(and others) that when you follow an user in an instance, all the post form the instance get displayed from now on.

Most of them start with "@peertube@[respective instance]"

Your account even shows as one of its followers on the /about/follows ("network" tab) page.

If you are following a user and you’re seeing other posts from that instance I can imagine one of a few things happening. Either that person is boosting the posts, or replying to them, or you are following a person from your own instance so you are just seeing your local timeline?
